This is a guest post by Anika Harvey. My friend's mom Lindsay Ahrens made this salsa for us regularly throughout high school and finally I asked her for the recipe. The great thing about this salsa is that you don't need to wait for a good tomato season and also you can do it all in a Cuisinart or Vitamix! Everything here is super forgiving and you can change things to suit your tastebuds. I recommend pairing this salsa with your favorite tortilla chips. It's also fantastic on eggs in the morning or really anything you want. This salsa is an all around winner!
The Best Salsa Ever by Anika Harvey with Lindsay Ahrens
Makes about 4 1/2 cups
2 15-ounce cans S&W Mexican-style canned tomatoes
2 bunches cilantro
1 clove garlic
1/4 onion
Lime juice to taste
Jalapeno to taste
Salt to taste
Put cilantro, jalapeno, garlic, onion, and a small squeeze of lime juice in Cuisinart. Blend until the cilantro is in tiny pieces. Add canned tomatoes with juices and a small pinch of salt. Blend again. Taste, then add more jalapeno or salt or lime, depending on your preference.
